Seared Flank Steak with Broccolini Stir-Fry
Serves 4-6
Marinade
| 1 | cup orange juice | |
| 2 | Tbsp. olive oil | |
| 2 | Tbsp. sesame oil | |
| 2 | cloves garlic, chopped | |
| 2 | pounds flank steak |
Flank Steak
| 3 | Tbsp. olive oil | |
| 1 | red onion, sliced | |
| ½ | tsp. curry powder | |
| 2 | chopped tomatoes | |
| 2 | Tbsp. soy sauce | |
| 1 | Tbsp. chopped parsley | |
| ½ | Tbsp. chopped cilantro | |
| Salt and pepper to taste |
Broccolini Stir-Fry
| 1 | red onion, sliced | |
| ½ | cup olive oil | |
| 1 | 2 inch piece of ginger, minced | |
| 2 | cloves garlic, chopped | |
| 1 | Tbsp. sesame seeds | |
| 2 | tsp. curry powder | |
| 2 | cups broccolini | |
| 2½ | Anaheim chilies, chopped | |
| 2 | Tbsp. soy sauce | |
| juice from 2 limes | ||
| 2 | tsp. sesame oil | |
| 2 | Tbsp. rice wine vinegar | |
| 2 | scallion stalks, chopped | |
| 2 | Tbsp. cilantro |
Prepare the Meat
- Slice the flank steak into strips and marinate in the orange juice, olive oil, sesame oil, and garlic for 2 hours.
- In a wok, heat the olive oil, onion, and curry. Add the marinated beef and sauté for 2 minutes.
- Stir in the tomatoes and soy sauce, then add the parsley, cilantro, and salt and pepper to taste.
For the Stir-fry
- In another pan, sauté the onions in the olive oil for 3 minutes.
- Add the ginger, garlic, sesame seeds, curry and tomato paste, and sauté for another 2 minutes.
- With the pan on high heat, add the broccolini, chilies, soy sauce, lime juice, sesame oil, vinegar, scallions and cilantro.
- Plate the vegetables, and top with the meat.
